Kumquat Tomatillo Salsa
My Inspiration
We have an amazing Kumquat tree that produces lots of fruit by early summer. To be honest until we moved to our place, I never really had kumquats and did not know how fun and creative you can be with them. So last year was a good year for kumquats since the last 2 springs we did not get any fruit off the tree. I was so excited to see what I could make with the kumquats. I created this recipe for our soft taco with grilled trout and oh boy! It was delicious! I wish I could have kumquats year round just so I can make this salsa. This salsa is super easy and fresh!
Ingredients
2 cups of kumquats, sliced in half and seeds removed
10 ounces Salsa Verde, mild or hot (depends on your taste preference)
1/2 cup fresh orange juice
1/4 cup vinegar
2 tablespoons garlic, fresh and minced
1 small bunch cilantro, stems removed
2 tablespoons roasted cumin seeds
Lime juice, about 3 limes squeezed
1 red onion, diced small
1 red bell pepper, diced small
1 green bell pepper, diced small
1 jalapeno, minced
Salt and pepper to taste
in a blender or food processor, puree the Salsa Verde, orange juice, vinegar, garlic, cumin seeds, and lime juice. Place the kumquats, onion, bell peppers, and jalapeno in a medium bowl, add the puree, and mix well.
This salsa will keep, covered and refrigerated, 4 to 5 days.
